Honey Lime Shredded Chicken Tacos
Ingredients:
- 2 pounds chicken breast. Filet each breast in half
- One 15 oz jar of salsa verde , or tomatillo salsa
- One can diced green chilis
- Juice of 2 small limes
- 2 TBSPNs of honey
- One bunch fresh cilantro chopped
- 1 tsp garlic salt
- 1 tsp cumin
- 1 TBPN chili powder
- 1/2 tsp paprika
Directions:
Place chicken breasts in bottom of crockpot. Mix all other ingredients together in a bowl . Pour ingredients from the bowl over the chicken in the crockpot . Using a fork, distribute the sauce so it covers all the chicken breasts . Set on low for 4 hours and cook. After 4 hours, remove just the breasts to a cutting board to shred with a fork . Place the shredded chicken back into the crockpot and reheat prior to serving .
Serving options:
- Over shredded lettuce or in a lettuce “cup” if you are low carb
- Wrapped in a gluten free wrap
- Over rice
- I like to top with a dollup of plain Greek yogurt
