Honey Lime  Shredded Chicken Tacos 


  1. 2 pounds chicken breast. Filet each breast in half 
  2. One 15 oz jar of salsa verde , or tomatillo salsa
  3. One can diced green chilis 
  4. Juice of 2 small limes
  5. 2 TBSPNs of honey
  6. One bunch fresh cilantro chopped
  7. 1 tsp garlic salt
  8. 1 tsp cumin 
  9. 1 TBPN chili powder 
  10. 1/2 tsp paprika 


Place chicken breasts in bottom of crockpot. Mix all other ingredients together in a bowl . Pour ingredients from the bowl over the chicken in the crockpot . Using a fork, distribute the sauce so it covers all the chicken breasts . Set on low for 4 hours and cook. After 4 hours, remove just the breasts to a cutting board to shred with a fork . Place the shredded chicken back into the crockpot and reheat prior to serving . 

Serving options:

  1. Over shredded lettuce or in  a lettuce “cup” if you are low carb
  2. Wrapped in a gluten free wrap 
  3. Over rice 
  4. I like to top with a dollup of plain Greek yogurt
