I make this recipe when I know we will be busy as it is so easy to grab and eat quickly! It is delicious AND healthful. It is full of healthy fats, protein and antioxidants. The protein and fat in this recipe helps to balance blood sugar and keep you full longer. Can’t go wrong here!


  • 1 whole rotisserie chicken, with the chicken pulled off and chopped
  • 1 bell pepper, chopped
  • 1/4 cup artichoke hearts, chopped
  • 1/4 cup sliced kalamata olives
  • 1/2 onion, chopped
  • 1/2 cup (or more to taste) avocado oil mayonaise — we like these brands: Sir Kensingtons, Chosen Foods, Primal Kitchen
  • salt and pepper, to taste
  • green onions, chopped for serving


Mix all ingredients and refrigerate. Serve with green onion sprinkled on top–either
over greens , in an almond or coconut flour tortilla, or with paleo crackers like these from Simple Mills.
